What could be easier than grabbing a boiled egg or two for breaky? I usually do several at a time so that they are ready well ahead.
Boiled Eggs
Put 6 eggs in a pan with a lid. Cover with water and place the lid on the pan. Bring to a boil then remove from heat and set timer for 17 minutes. Pour off the hot water and run cold water over the eggs until well cooled. Leave for a few minutes before peeling. Store covered in fridge.
Egg Salad
If you wish you can take your boiled eggs and add 1/3 cup good mayonnaise like Chosen Foods Avocado oil Mayo, salt and pepper and mash. Add chopped green or red onion and serve on Keto Gluten free bread or I like to use Le Pain des Fleurs organic crisp bread. They are simply buckwheat...no gluten. (the blue box). They are about the size of a Ryvita cracker and have about 4 grams of carbs per cracker.
Of course there are many ways to do eggs like, scrambled, poached, omelettes, etc. They take a bit more time so might be best reserved for weekends if you are pressed for time in the morning.
